Folic acid, also known as vitamin B9, belongs to the B vitamin complex. It is a water-soluble vitamin that the human body cannot synthesize on its own and must be obtained through food. The folate compound found in food is called "folic acid." Both folate and folic acid play important metabolic roles, such as participating in cell division and blood formation. Folate deficiency is the most common vitamin deficiency in Europe. Because folate in food is very heat-sensitive, only a small amount ends up on the plate during cooking. While this vitamin is present in many plant and animal foods, especially grains, green vegetables (especially leafy greens like spinach and lettuce), and legumes, its effective absorption into the body depends on how the food is cooked.
